It’s time to say goodbye to winter and welcome this new season of spring! Bake these goodies to embrace the vibrant colors and fresh flavors of the season!

These are the best for those sunny days when you’re craving something sweet, but fruity! Enjoy these lemon bars with your friends and family!

 

Ingredients:

Shortbread Base:

  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • ½ cup powdered sugar
  • ¼ tsp salt
  • ½ cup butter (make sure it’s cut into cubes)

 

Lemon Curd:

  • 2 eggs
  • 1 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon zest
  • ½ cup lemon juice
  • (Optional) Raspberries

 

Directions:

  1. Preheat oven to 350° Fahrenheit.
  2. Grind all the shortbread base ingredients (flour, cornstarch, powdered sugar and salt) together. Make sure you sift all the dry ingredients together beforehand. I prefer to mix them in a food processor, but a blender works as well. Make sure it’s still a powder, instead of a dough texture.
  3. Pour the mixture into a pan and press firmly into the base. I prefer using something flat, like a measuring cup.
  4. Bake for 20 minutes. Make sure it’s golden and pour in the curd immediately after removed from the oven.
  5. While the base is baking, whisk the lemon curd ingredients in a bowl. Make sure it’s a thin liquid consistency.

She discovered her love for creative writing at a young age, but was confined to writing within her reading classes. She loves writing her mind out with whatever details she could think of, so she decided to join journalism. She plans on writing with many students' voices and covering issues that aren´t discussed in mainstream media. Many different news outlets have very biased opinions and cause many stereotypes to be made by only hearing one-sided arguments. She plans on writing articles that she´s passionate about and she wants to persuade many readers with what she writes. She wants to inform many readers about news that gets covered up about the countries in South Asia and the countries in the Middle East. She wants to be able to change the readers´ mind with what she writes. Some interests of hers include hanging out with friends and watching shows. She plans on having a career that shares information that doesn´t get discussed often with many audiences. She wants people to have the raw truth that gets covered up in the news.
