Ingredients:
Shortbread Base:
- ¾ cup all-purpose flour
- ¼ cup cornstarch
- ½ cup powdered sugar
- ¼ tsp salt
- ½ cup butter (make sure it’s cut into cubes)
Lemon Curd:
- 2 eggs
- 1 cup granulated sugar
- 2 tbsp all-purpose flour
- 1 tbsp lemon zest
- ½ cup lemon juice
- (Optional) Raspberries
Directions:
- Preheat oven to 350° Fahrenheit.
- Grind all the shortbread base ingredients (flour, cornstarch, powdered sugar and salt) together. Make sure you sift all the dry ingredients together beforehand. I prefer to mix them in a food processor, but a blender works as well. Make sure it’s still a powder, instead of a dough texture.
- Pour the mixture into a pan and press firmly into the base. I prefer using something flat, like a measuring cup.
- Bake for 20 minutes. Make sure it’s golden and pour in the curd immediately after removed from the oven.
- While the base is baking, whisk the lemon curd ingredients in a bowl. Make sure it’s a thin liquid consistency.
