Eleanor Roosevelt is known for their various clubs and is now welcoming the Baking Club! The club officially started on February 11, 2025. The founders and presidents include juniors Esther Sonoiki and Ritee Singh. Since the club started, meetings on every other Tuesday have been taking place. When asked about what started the creation of Baking Club, Singh shares, “We came up with the idea last year, sitting in our chemistry class, thinking of possible clubs to start to engage students at ERHS”. After concluding that each of them had a passion for baking, the club was in motion.
The main goals and plans of the club include “creating an interactive and welcoming environment,” shares Singh. This club wants to welcome everyone to enjoy the experience of baking and decorating. Baking Club is a great opportunity for any student to join to have fun, meet new people, and create long, memorable memories. Meetings will be held regularly with a variety of baking projects. “We would also love to give the creations we make for fundraising events,” Singh adds, “and to those in need at shelters or for kids who don’t get treats during the holidays”. Ending with some baking advice, start with something simple and be open to experimenting when it comes to flavors, textures, and decorations. “Don’t get upset or discouraged if your first attempts aren’t perfect or pretty,” Singh shares, continuing with, “Baking is a skill that requires a lot of practice in order to improve. Most of all, enjoy the process!”
Strawberry Crunch Cookies:
- First, get a large bowl and add strawberry cake mix.
- Then, add ⅓ cup of vegetable oil into the mix.
- After that, add two eggs into the mix. Mix the ingredients into the dough.
- Next, pour white chocolate chips into the dough.
- After, mix again to combine ingredients.
- Next, place 3 of each strawberry and vanilla wafers into a zip lock bag. Crush them until they are crumbled.
- Preheat oven to 300 degrees.
- Next, get a pan and place parchment paper over it.
- Then, add 2 spoonfuls of dough formed into a ball on to the pan.
- When the oven is preheated, put the cookies into the oven.
- Let the cookies bake for 20 minutes.
- After baking, let the cookies cool for 5 minutes.
- Add crushed vanilla and strawberry wafers to each cookie
- Warm your white chocolate until melted. Drizzle over each cookie!
